Panduan menumbuk sambal belacan
* Kepada adik-adik di bawah usia 6 tahun sila dapat kebenaran mak dulu utk mengelak sebarang kecederaan yang tak di ingini.
*pastikan tak mempunyai alahan kepada belacan yang boleh menyebabkan masalah keradangan yang serius.
*gunakan 'google' untuk melindungi bijik mata dari percikan lada.Rasa nak pakai baju ujan pun leh jugak,kalau takut terpercik satu badan.
*para suami tak digalakkan cari pasal atau memulakan pergaduhan semasa isteri sedang menumbuk sambal belacan.
*fokus dan hindari menyanyi semasa menumbuk sambal belacan kerana air liur korang boleh terpercik sekali,itu boleh tahan lagi tapi,kalau taik gigi...
*menggunakan lesung batu,jika pakai blender maka ia bukanlah digelar sebagai menumbuk sebaliknya dikenali sebagai memblender.

BISKUT SARANG SEMUT
Bahan
250 gm butter
100 gm gula halus
350 gm tepung gandum.....]
100 gm tepung jagung......
1 biji kuning telur
1 s/teh esen vanilla
hiasan
Sedikit coklat rice
sedikit manik gula kecil(warna-
secukupnya paper-cup kecil
Cara
1. Pukul kembang butter dan gula.
2. Masukkan kuning telur dan esen vanilla dan gaul rata.
3. Masukkan tepung dan gaul rata.
4. Parutkan adunan kedalam mangkuk kecil dan sudukan kedalam paper-cup.
5. Taburkan coklat rice dan manik gula kecil.
6. Bakar dalam oven dgn suhu 180'C sampai masak (anggaran 15 minit).
7. Sejukkan dan simpan dalam bekas kedap udara.

Juadah Berbuka
Kueh Nagasari
Kueh Nagasari
1 packet (100g) tepung Hong Kwe
1/2 cawan gula
1 tin santan
1 tin air
sedikit pewarna merah
Hirisan pisang
Daun pisang yang telah dilayukan. Dipotong mengikut ukuran 6" x 5"
Cara:
1. Didalam sebuah periuk, masukkan santan bersama air dan tepung hong kwe. Masukkan gula dan kacau hingga sedikit pekat. Matikan api dan biarkan sejuk sebentar.
2. Letakkan hirisan pisang diatas daun, kemudian lipat satu bahagian bawah dan tuangkan sedikit adunan yang telah dimasak tadi. Lipat dan kemaskan bahagian atas pula.
3. Susun di atas loyang dan kukus selama lebih kurang 10minit.

Juadah Berbuka
KUEH LOMPAT TIKAM
Bahan Lapisan Hijau
1 cawan tepung beras
1 s/b tepung jagung
3 cawan santan cair
1/2 cawan jus pandan + pewarna hijau
1 s/k air kapur
secubit garam
Cara
1. Panaskan kukusan dan sapu minyak pada loyang.
2. Gaulkan semua bahan dan tapiskan.
3. Masakkan adunan diatas api sebentar dan masukkan dalam loyang dan kukus selama 15 minit.
4. Bila dah masak cakarkan sikit permukaan kueh supaya memudahkan bahagian lapisan santan melekat.
Bahan Lapisan Putih
1.5 cawan tepung beras
1 s/b tepung jagung
4 cawan santan pekat
1 s/k garam
Cara
1. Campurkan semua bahan dan tapiskan.
2. Masakkan bahan kueh ini sekejap diatas api.
3. Tuangkan adunan diatas lapisan hijau.
4. Kukuskan selama 15 minit dan sejukkan
5. Bila dah sejuk potong kueh dan hidangkan dengan air gula merah.
Air Gula Merah
Bahan
1 cawan gula merah
1 cawan gula biasa
2 cawan air
1 helai daun pandan [ koyakkan]
Cara
1. Masakkan semua abhan sehingga mendidih.
2. Tapiskan dan hidangkan bersama kueh lompat tikam.
TALAM KELADI BERLAUK
Bahan A
2 cawan tepung beras
2 s/b tepung ubi
2 s/b tepung gandum
6 cawan santan [1 biji kelapa]
1 s/k garam
Bahan B
2 cawan ubi keladi [potong dadu, rebus dan toskan]
2 s/b udang kering
4 tangkai cili merah [cincang]
1 pokok daun bawang ]
1 pokok daun sup ] racik
2 s/b bawang goreng
Bahan C [hiasan]
cili merah [cincang]
bawang goreng
daun sup dan daun bawang [racik]
Cara
1. Panaskan kukusan dan sapukan minyak pada loyang 10 x 10 inci.
2. Campurkan semua bahan A dan tapiskan dalam mangkuk.
3. Masukkan bahan B dalam mangkuk dan gaulkan rata.
4. Tuangkan adunan perlahan-lahan dalam loyang yg telah diletakkan dalam kukusan.
5. Kukuskan adunan selama 30 minit.
6. Bila dah masak sejukkan beberapa jam.
7. Potong kueh dan taburkan bahan hiasan.
8. Hidangkan.

Ikan Kukus dengan Sos Pedas Masam
Seekor ikan siakap atau kerapu sederhana besar
10gm Bawang merah
10gm Bawang putih
10gm Halia
3gm Cili padi
10gm Cili merah
20gm Sos plum
1biji Plum bergaram
20gm Taucu
10gm Air
1/6 sudu teh Kicap pekat
1/4 sudu teh Gula
Untuk hiasan:
Daun bawang
Hirisan lobak merah
Cili merah
Daun pasli
1. Kukus ikan selama 13-16 minit dan asingkan
2. Kisar bawang besar, bawang putih, halia, cili padi, cili merah dan tumiskan bersama bahan-bahan yang lain untuk dijadikan sos.
3. Tuangkan sos ke atas ikan yang telah siap dikukus tadi.
4. Hiriskan daun bawang, lobak merah, cili merah dan daun pasli dan hiaskan di atas ikan.

Resepi Hangat: Cold Beverages
Grapefruit Mint Cooler
Ingredients:
- 125 ml Water
- 125 gms Sugar
- 250 ml Soda water
- Handful of Mint Sprigs
- 450 ml Grapefruit juice
- Mint sprigs, to decorate
- Juice of a 4 large Lemons
- Crushed Ice
Method:
- Put the sugar and water in a heavy-based saucepan and stir over a low heat until dissolved. Leave to cool.
- Crush the mint leaves and stir then into the syrup. Cover and leave to stand for about 12 hours, then strain into a jug.
- Add the lemon and grapefruit juices to the strained syrup and stir well. Fill 6 old-fashioned glasses or tumblers with crushed ice and pour the grapefruit into the glasses.
- Top up with the soda water and decorate with mint sprigs.
Tip: Dry Ice (frozen CO2 not very cold water ice) is fun to use sometimes, but don't use it with carbonated beverages.
Pink Melon Delight
Ingredients:
- 300 ml Ginger Ale
- 2-3 scoops Orange Sorbet
- 150 gms Melon, cut into dice
- 150 gms Strawberries, plus extra to decorate
Method:
- Put the melon, strawberries and orange sorbet in a blender and blend at high speed for 15 seconds.
- Gently stir in the ginger ale, pour into wine glasses and decorate each with a strawberry.
Tip: Pour lemon juice with sugar and a little salt into ice trays, to make cubes which can be used for instant lemonade.
Limeade
Ingredients:
- 6 Limes
- 750 ml Boiling Water
- 125 gms Castor Sugar
- Pinch of Salt
- Ice-Cubes
- Lime wedges and Mint leaves to decorate
Method:
- Halve the limes then squeeze the juice into a large jug.
- Put the squeezed lime halves into another heatproof jug with the sugar and boiling water and leave to infuse for 15 minutes.
- Add the salt, give the infusion a good stir, then strain it into the jug holding the lime juice.
- Add half a dozen ice cubes in each glass and pour the limeade over.
- Add a lime wedge and a mint leaf to decorate.
Tip: To keep coconut kernels fresh rub a little salt over them, or sprinkle a little salt water on them
Peach Lassi
Ingredients:
- 1 part Banana
- 1 part Peach juice
- 1 part liquid Yoghurt
Method:
- Blend equal quantities of yoghurt, peach juice and banana.
- Pour in wine glasses with cocktail sticks of orange and banana.
- Serve chilled.
Serve: 1
Tip: Crushed ice cools food and drinks fast; block ice lasts longer.
Rose Water
Ingredients:
- 1 litre Water
- 100 gms Sugar
- 200 gms Rose petals
- Juice of half Lemon
Method:
- Wash the petals well and simmer them in water with sugar and the juice from half a lemon. Allow to cool.
- Pour onto ice in flutes decorated with a rose.
- Drink either straight or topped up with soda water.
The sugar quantities should be adjusted according to taste.
Tip: Crushed ice cools food and drinks fast; block ice lasts longer.
Limey
Ingredients:
- 1 Egg White
- 400 ml Lime juice
- 400 ml Lemon juice
Method:
- Blend the ingredients with ice in a blender until foamy and pour into cocktail glasses.
- Decorate with a stick of green cocktail cherries and lime slices.
For those who prefer less astringency, caster sugar may be added to taste during blending.
Serves: 4-6

Iced Coffee
Ingredients:
- Fresh Milk
- Sugar to taste
- 2½ tbsps Instant coffee
Method:
- Put the coffee and sugar into a 1 litre coffee pot or jug, add a small amount of boiling water and stir until dissolved.
- Fill the pot with cold water and chill in the refrigerator.
- Quarter-fill cider or rocks glasses with black iced coffee.
- Top up with cold milk and add an ice cube. Garnish with whipped cream.
Serves: 6
