Resipi Ramadhan

Di bulan puasa ni Bazar Ramadhan naik umpama cendawan lepas hujan. Para penjualnya pula ramai juga di kalangan yang baru nak belajar berniaga. Tu yang kadang-kadang geram tu nampak cantik menarik tapir rasanya hampeh. Tu yang ramai juga yang tidak suka berbuka puasa dengan kuih tunjuk ni dan lebih bahagia dengan buat hidangan berbuka puasa sendiri. Kata orang air tangan isteri/ibu tu kan banyak kelebihannya.

Ok kalau anda atau isteri anda suka membuat sendiri juadah berbuka, kadang-kadang pening juga kan nak buat menu apa pula hari ini.

Oleh itu saya kongsikan koleksi resepi yang sesuai untuk bulan Ramadhan ni.

Resepi untuk anak-anak





Bubur Berlauk
Bahan-Bahan:
150 gm beras (1 cawan)
1350 ml air (5 ½ cawan)
8 keping besar halia
1 sudu teh lada hitam (ditumbuk kasar)
150 gm daging (dicincang)
1 cawan isi udang
1 cawan isi sotong
1 cawan santan daripada
½ biji kelapa
Garam secukupnya

Bahan-bahan ditabur:
Hirisan daun bawang
Bawang goreng

Cara:
Rebus beras bersama air, halia dan lada hitam hingga beras separuh kembung. Masukkan daging & kacau sekali-sekala supaya bubur tidak berkerak. Setelah daging empuk, masukkan udang, sotong dan santan. Kacau rata. Apabila bubur hampir pekat, masukkan garam. Kacau dan angkat. Ketika menghidang panas-panas, tabur daun bawang dan bawang goreng.

Resepi Ayam Goreng Rempah Tak Kunjung Tiba





Resepi berbuka puasa kita hari ini ialah AYAM GORENG BEREMPAH TAK KUNJUNG TIBA



Bahan-bahan nya ialah:
-sudah tentu ayam
-minyak masak,kalau boleh cap jalen(ada ker?)
-kicap jalen(hah yg nie mmg ada)
-sos jalen
-rempah ratus yg malas nak sebut sbb beratus-ratus
-lagi korang tanya lah kat mak anda..

Ok cara-caranya plak;

Pastikan ayam yg digunakan sudah disembelih dan kalau boleh ayam kampung yg dahpun akil baligh.Untuk sembelih anda boleh panggil tok imam masjid kampung anda.Kalau tok imam sibuk ajk masjid pun boleh juga dan bukannya Ah Chong yg buka kedai repair basikal belakang rumah anda.

Tuang minyak masak ke dalam kuali.Tunggu sehingga minyak betul2 panas.Anda boleh lah melakukan aktiviti lain sementara menunggu minyak panas.Ambil masa ini untuk melakukan senaman ringan.Selepas melakukan senaman ringan, cuba berlari-lari anak disekeliling rumah. Bila sudah bosan cuba pula berjoging sepanjang taman di rumah anda. Pastikan anda melakukan senaman ringan yg betul untuk mengelakkan org di taman usung anda balik rumah sebab kaki anda krem.

Cara untuk memastikan minyak sudah cukup panas, caranya mudah saja.Ambil jari anda,kalau malu anda boleh minta bantuan adik anda.Letakkan jari anda di tepi kuali dan bila secara spontan anda menjerit…adoi!! ,maka minyak sudah betul-betul panas.

Pecah sebiji telur ayam dan masukkan ke dalam kuali tadi.Anda tidak perlu menggunakan hammer ataupun apit-g untuk memecahkan telur tersebut,memadailah dengan menggunakan sudu ataupun pecahkan di tepi kuali dalam skala 90 darjah.

Bila telur tersebut sudah panas angkat telur tersebut dan letakkan di pinggan. Hiaskannya dengan menabur bawang goreng ataupun timun untuk menambahkan lagi kesedapan makanan.Jangan tabur macam nak tepung tawar mempelai bersanding pulak.Macam orang kahwin nanti jadinya.

Ayam tadi ambil dan masukkan ke dalam peti sejuk.Anda boleh gunakan pada hari yang lain.Inilah yang dikatakan family planning.

Panggil sanak saudara ataupun rakan taulan ke rumah anda untuk merasai hasil masakan anda.Menu ini sesuai untuk hidangan 2 orang dan boleh ditambah dengan masak lagi beberapa telur ayam.

Akhir kata selamat mencuba dan pasti anda tak akan boleh lupakan masakan ini sampai bil-bila.Tapi saya tak janji tau..

Resipi BIHUN SINGAPORE



INGREDIENTS:
600 gm bihun [rendamkan lembut dan toskan]
200 gm daging [hiris nipis dan rebus lembut]
200 gm sotong [hiris kecil]
200 gm kucai [potong pendek]
250 gm kobis [racik halus]
1 batang carrot [sagat ]
3 s/b minyak
garam
air
BAHAN TUMBUK:
1 s/b lada hitam
1 ulas bawang merah
3 ulas bawang putih
BAHAN HIASAN / TUMBUK:
1 biji telur [buat dadar dan hiriskan]
2 biji cili merah [mayang halus]
METHODS:
1.Panaskan minyak dan tumiskan bahan tumbuk sehinggan wangi.
2.Masukan daging dan kacau rata.
3.Bila nampak masak masukkan sotong, kobis, carrot, garam dan air. Kacau rata.
4.Masukkan bihun. Kacau rata sehingga sebati.
5.Bila nampak bihun lembut masukkan daun kucai.
6.Gaulkan rata sehingga nampak bihun lembut. Rasakan garam.
7.Bila menghidang, taburkan hirisan telur dadar dan cili merah.

Sandwiches for breakfast



PEANUT BUTTER AND BANANA SANDWICH


Ingredients

Brown bread - 8 slices
Butter - 4 tablespoons
Peanut butter - 4 tablespoons
Ripe bananas - 6
Potato wafers - 1 packet






Method

1. Apply butter on one side of a slice of bread.
2. Slice a banana into thick roundels. Place these on buttered side of bread.
3. Apply peanut butter generously on one side of another slice of bread. Place it over the banana rounds with the buttered side downwards.
4. Press lightly and cut into two triangles. Similarly prepare the other sandwiches. Serve with potato wafers.
TOASTED CHEESE SANDWICH

Ingredients
Brown bread slices - 8
Cheese, grated - 1½ cups
Onion, chopped - 1 medium
Green capsicum, seeded and chopped - 1 medium
Tomato, seeded and chopped - 1 medium
Tomato sauce - 4 tablespoons
Green chillies, chopped - 2-3
Butter - 4-5 tablespoons



Method

1. Take cheese in a bowl. Add onion, green capsicum, tomatoes, tomato sauce, green chillies and mix.
2. Apply this mixture on top of a bread slice, place another slice over it and press slightly. Similarly prepare the remaining sandwiches.
3. Apply a little butter on one side and place them on a grill buttered side down. Apply a little butter on the top side and close the grill. Grill till golden brown.
4. Serve hot.
TUNA SALAD SANDWICH

Ingredient

Tuna, drained and flaked - 1 cup
Whole wheat bread - 8 slices
Pickled onions, chopped - 2-3
Celery, chopped - 2 inch stalk
Mayonnaise - 6 tablespoons
Tomato ketchup - ¼ cup
Red chilli sauce - 1 teaspoon
Butter - 4 tablespoons
Lettuce leaves, hand torn - 8



Method

1. Take tuna flakes in a bowl. Add pickled onions, celery, mayonnaise, tomato ketchup, red chilli sauce and mix.
2. Butter all the bread slices on one side. Place half of the lettuce leaves over four bread slices on the buttered side. Spread the tuna filling over them. Cover with the remaining bread slices, butter side down, and press lightly.
3. Cut each sandwich into two triangles. Arrange some lettuce leaves on a serving plate, place the sandwich triangles over them and serve immediately.
VEGETABLE CLUB SANDWICH

Ingredients
Bread - 12 slices
Green capsicum, seeded and cut into thin strips - 1 medium
Carrot, grated - 1 medium
Cabbage, grated - ¼ medium
Mayonnaise sauce - ¼ cup
Pineapple slices, chopped - 2
Salt - to taste
White pepper powder - ¼ teaspoon
Butter - 4 tablespoons
Lettuce - ½ bunch
Tomatoes, sliced roundels - 2 medium
Cucumber, sliced roundels - 1 medium
Cheese slices - 4
Potato wafers - as required

Method

1. Toast the bread slices.
2. Mix mayonnaise with green capsicum, carrot and cabbage to make coleslaw. Add pineapple pieces to it. Season well.
3. Apply butter on all the toasted bread slices on one side and on both the sides of four of them. Place four slices of bread, single side buttered, on a board. Arrange half of the lettuce leaves on them, keep some coleslaw aside for serving as accompaniment and spread the remaining evenly on all the four slices. Arrange another layer of bread slices, both sides buttered, on it. On this bread slice place the remaining lettuce leaves, tomato and cucumber slices, sprinkle seasoning and place cheese slices.
4. Cover with the final layer of toasted bread slices, single side buttered. Lightly press with palm to set the ingredients well.
5. Using a very sharp knife cut the edges of the sandwich and cut it diagonally. Serve with reserved coleslaw and potato wafers.

Chef's Tip: One can also make Tomato-omelet or Fried-egg and place in between as one of the stuffing of the sandwich.

Aroma Rasa: Kerabu Tauge Chef Zam

PELBAGAI jenis kerabu boleh didapati di negara kita, malah ianya menjadi pembuka selera yang sangat ideal untuk jamuan-jamuan tengahari dan makan malam.

Pembaca Aroma Rasa boleh mencuba resipi yang digubah oleh Chef Zam - hos rancangan Serimas Selera Dunia sewaktu beliau menjelajah ke Hong Kong.

KERABU TAUGE CHEF ZAM
Bahan-bahan:

300gm tauge (dibuang ekor)
4 batang daun kucai (dipotong pendek-pendek)
100gm udang sederhana (dibuang kepala dan kulit)
4 biji bawang merah (dihiris halus)
2 sudu besar kerisik
1 cawan santan putih
5 biji cili padi (dipotong mengikut citarasa sendiri)
Jus limau nipis
Gula dan garam secukupnya

Cara-caranya:

1) Goreng udang dengan sedikit mentega dan asingkan.
2) Tumiskan kerisik, udang kering dan hirisan bawang merah.
3) Gaul sebati udang, tauge, kucai dan cili padi dengan bahan-bahan tumisan di dalam mangkuk salad.
5) Masukkan santan, jus limau, gula dan garam secukup rasa.
6) Hidangkan sebagai pembuka selera.

Nota: Menurut Chef Zam, tauge tidak perlu dicelur kerana haba dari bahan tumisan akan melayukan tauge setelah digaul.

Prawn & Pasta Salad




Ingredients:
  • Sprigs Dill
  • 1 Onion, sliced
  • 250 gm dried Pasta
  • Grated Black Pepper
  • 1 bunch thin Asparagus
  • 250 gm cooked Prawns, peeled
  • 1 cucumber, seeded and sliced

    Curd Dressing
  • 1 tsp Sugar
  • ½ cup Curd
  • 1 tbsp Water
  • 2 tsp chopped Dill
  • ¼ cup oil free Salad Dressing

Method:
  1. Place pasta in a large pot of boiling water and cook until tender.
  2. Rinse under cold water and drain.
  3. Cook asparagus until tender but still crisp. Combine pasta with prawns, cucumber, asparagus and onion in a large bowl.
  4. Combine dressing ingredients in a bowl, mixing well until smooth. Just before serving drizzle salad with dressing, black pepper and dill.


Tip: To retain firm texture of fish, add lemon juice when cooking is completed.

HARLEQUIN COOKIES



A simple way to make delicious butter cookies dipped in dark
chocolate.

Cooking Time : 20 mins.
Preparation Time : 20 mins.

Makes 20 cookies.

Ingredients

1 1/4 cups self-raising flour
1/3 cup milk powder
3/4 cup butter, softened
2 tablespoons castor sugar
1/4 cup condensed milk
1/2 recipe tempered chocolate

Method
1. Sieve the flour. Combine the flour with the milk powder and keep
aside.
2. Cream the butter and castor sugar till light and fluffy.
3. Add the condensed milk to the butter and sugar and mix well.
4. Fold in the flour mixture to form a soft dough.
5. Refrigerate the dough for about 20 minutes.
6. Divide the dough into 20 equal portions and
shape into round cookies or cut using a cookie cutter.
7. Place the cookies on a greased baking tray.
8. Bake in a pre-heated oven at 160°C (320°F) for about 15 to 20
minutes.
9. Remove from the baking tray and cool on a wire rack.
10. Dip half of each cookie into the tempered chocolate and
allow to set on a wire rack
